The origin of Flor de Esgueva goes back more than 60 years ago, when it launched a small cheese factory to produce cured, very artisan cheeses and using only raw sheep milk collection in Castilla y León. The processing plant Flor de Esgueva is located in the town of Peñafiel Vallisoletana. Of Roman origin, is located in the center of the Ribera del Duero and has a long history, as evidenced monuments, among which the Castle, situated on a rock and divisable from throughout the area. By using raw milk for processing allows for a "living" cheese, which is constantly evolving, and has a taste and texture very characteristic. Esgueva flower matures for about seven months.
